The UC Master Food Preservers of San Mateo and San Francisco Counties will teach you the science and art of safe home food preservation backed by university research and tested techniques. Whether you’re interested in creating your own pickles, jams, or even cheeses, this course will guide you through safe and delicious ways to preserve the bounty of your kitchen and garden. Each session will include a hands-on element. You’ll learn about preservation techniques, history, and cultural traditions. Our final session will include a tasting party featuring all the delicious products we will be creating.
Sessions Include:
- Fermentation & Pickling – Learn the fundamentals of lacto-fermentation and vinegar pickling to make sauerkraut, kimchi, and more.
- High-Acid Canning – Safely preserve fruit, chutneys, and other high acid foods using water bath canning methods.
- Cheesemaking Basics – Try your hand at simple cheeses like ricotta, feta, and fresh mozzarella.
- Fruit Spreads – Craft vibrant jams, jellies, and fruit butters with seasonal ingredients.
- Gifts from the Kitchen – Explore creative, edible gift ideas that are perfect for holidays and special occasions.
This course combines practical demonstrations, safety guidelines, and plenty of tasting opportunities. Leave with the skills and confidence to preserve food at home!
